Turkish zucchini stuffed with minced meat and bulgur
Minced meat is not only a favorite ingredient in German cuisine, it is also often used in Turkish recipes. Today it comes in rolled zucchini slices, found in Nazan Eckes’ cookbook.
And this is how it’s done:
- Wash and trim the courgettes. Then use a zucchini corer to carefully hollow out the zucchini without damaging the outer shell. Place the ground beef in a bowl. Peel the onion, grate or cut into very fine cubes and add to the minced meat. Add the bulgur and season with salt and pepper. Knead everything together to form a homogeneous meat dough.
- Fill the hollowed-out zucchini with the meat batter and place them in a suitable-sized saucepan.
- Mix the tomato paste with about 150 ml of water and pour over the zucchini. Cover the pot with a lid and bring to the boil once. Then simmer the stuffed zucchini for about 30 minutes at a low temperature. Halve the zucchini diagonally before serving.
- Place two filled zucchini halves on each plate and arrange the yoghurt next to them. Serve the yoghurt and salad separately.
The zucchini stuffed with minced meat and bulgur are also called bulgurlu kabak dolması. You can probably tell by looking at this name: We have Turkish cuisine to thank for the recipe – and Nazan Eckes, who wrote it in her cookbook “Happy. Healthy. Nazan.” has shared. The TV presenter traveled to her family’s homeland for her first cookbook, only to return with a suitcase full of traditional and modern recipes. She already knows many of them from her mother and has revealed in the book how she prepared them back then. By the way: Köftelik Ince Bulgur is fine bulgur for Köfte, which you can also replace with conventional bulgur if in doubt.
