Grilled salmon fillet on spicy wasabi pickles


It doesn’t always have to be the sausage or the neck steak: a good piece of salmon is the ultimate barbecue treat! And thanks to the recipe by professional chef and cookbook author Steffen Henssler (“Henssler’s quick number: 100 new recipes”*) you only need a few ingredients and minutes. The bed of creamy wasabi cucumbers provides an exciting spiciness and complements the tender fish perfectly. If you can’t or don’t want to grill, you can also simply prepare the quick number in the pan. What more do you want? Henssler shows how it’s done in the video!

Ingredients for 2 people:

  • 300 g salmon fillet (skinless)
  • ½ bunch of chives
  • 1/2 orange, thinly sliced
  • seasoning salt
  • Pfeffer
  • Olive oil (for greasing the grill pan)
  • 2 EL Butter
  • 1 onion, cut into strips
  • 1 cucumber, peeled, seeded and cut into crescents
  • 50 ml white wine
  • 4 EL Fresh cream
  • 1 TL Wasabipaste
  • 2 tsp dill, chopped

Preparation time: 4 minutes

Cooking time: 10 minutes

Total time: 15 minutes


  1. Cut the salmon fillet twice lengthways. Distribute some chives and a slice of orange in each of the incised compartments. Season the salmon on both sides with salt and pepper.
  2. Heat the grill pan and oil it with olive oil. Grill the salmon fillet in the hot grill pan with the filled side down for about five minutes.
  3. Meanwhile, melt butter in another pan. Add the onions and cucumbers to the butter and sauté for a minute or two. Once the cucumbers are translucent, season them with salt and pepper. Deglaze with white wine and let the wine reduce.
  4. Turn the salmon over and grill for another two minutes. Add the crème fraîche and wasabi to the cucumbers and melt over low heat.
  5. Add dill and stir briefly. Then arrange the wasabi cucumbers and place the salmon fillet on top.
