Appetite for hearty goulash, but no desire for meat? Then try our recipe for irresistible potato goulash!
If you really fancy a hearty meal in winter, you might think of goulash first. The ragout is particularly popular because it is so tender and flavorful. But goulash is one of the meat dishes par excellence.
A vegetarian alternative comes with the potato goulash. Instead of beef, potatoes are boiled until soft and seasoned like normal goulash. So you get the delicate, spicy taste even without meat.

Recipe for vegetarian potato goulash
Potatoes are rich in carbohydrates, protein and other minerals. Because they consist largely of water, they are low in calories, but still fill you up for a long time. They are also good for our intestinal flora. The perfect alternative!
Ingredients for approx. 4 servings:
- 800 grams of potatoes
- 500 ml vegetable broth
- 2-3 onions
- 2 cloves of garlic
- 50 grams of sour cream
- 2 tbsp olive oil
- 3 tbsp tomato paste
- 2 teaspoons paprika powder, sweet or hot
- Pepper salt
And it’s this easy:
1. Peel the potatoes and cut into bite-sized pieces. Finely dice the onions and garlic cloves and sauté lightly in a saucepan with olive oil and tomato paste.
2. Add potatoes and steam briefly. Deglaze with vegetable broth and let the potatoes simmer for about 20 minutes with the lid closed.
3. Season the potato goulash and add more or less spiciness to taste. Wash and chop the fresh parsley and garnish the potato goulash with it.
