Now it’s going to be healthy and delicious: There’s kale salad with avocado and pear. This is exactly what we need now, because the cold days drain the immune system and await us and our body with all kinds of challenges. We are happy to be supported by the positive properties of kale.
It is full of good nutrients and minerals. It provides us with calcium and iron, and it also provides a good portion of vitamin C and vitamin K. But that’s not all: Those who eat vegan should make good use of the kale season, because it is considered an alternative source of animal proteins. Good to know: Before the kale can sit in the salad bowl, it is first kneaded well. This makes the sometimes rough, curly leaves softer and more delicate. You can also blanch the kale if you wish. This makes it more digestible. A pinch of cumin, coriander, ginger or cardamom also make the cabbage easier to digest.

Kale salad with avocado and pear: Fit for fall
Salad with fresh kale, avocado and pear
Wash the kale and remove thick leaf veins. Shred large leaves. Mix the apple cider vinegar with salt, pepper, sugar and cumin until smooth, then add the oil. Pour the marinade over the cabbage and mix well. set aside.
Peel and dice the avocado. Wash, core and dice the pear. Chop the nuts and, if necessary, the cranberries.
Mix the orange juice with the tahini, yoghurt and mustard until smooth. Season the dressing with salt and pepper.
Combine the kale, avocado, pear, nuts and cranberries in a bowl, fold in the dressing and serve.
