Meatball recipe: Ingredients for 4 people

250 g minced wild meat (e.g. wild boar)
1.5 tbsp diced onion
115 ml milk
125 g sourdough bread (from the day before)
1 No
4 sprigs of flat-leaf parsley
4 sprigs of thyme
1 piece. Orange
1 tbsp juniper berries
2 EL Butter
1 pinch ground cinnamon (or wild spice)
vegetable oil
Salt pepper

Meatball preparation:

Pluck the leaves from the parsley stalks and chop finely.

Cut the sourdough bread into cubes and place in a bowl.

Sweat the onion cubes in a pan with a little oil, deglaze with the milk, bring to the boil, add wild spice (or cinnamon), pour over the bread cubes and mix.

(But recognizable pieces of bread should remain.)

Add the minced game meat to the bread mixture, stir in the egg and finely chopped parsley, season with salt and pepper (and a little more game seasoning if necessary) and, if necessary, work in 2-3 tablespoons of breadcrumbs.

Form the finished mass into meatballs. Then slowly fry the meatballs on all sides in a large pan with a little vegetable oil, let 2 tablespoons of butter foam up in it, add the thyme, juniper berries and some orange peel, cover with a lid, pull to the side and allow to simmer in the rising aromatic steam.

Then remove the lid, return the pan to the stove and fry over medium-high heat until the condensed water has evaporated and toasting begins to form all around.

TIP: As an alternative to the wild plants, a game goulash is also an excellent way to make game tasty for skeptics. You can prepare the goulash excellently with mushrooms and season it with a little orange, juniper, wild spices and cranberries.
