Recipe “Krautfleckerl: pasta pan with cabbage and minced meat” | – Guide

Ingredients for the pasta dough:

Put the flour or durum wheat semolina in a bowl with the eggs, salt and olive oil and knead into a smooth dough using a food processor or by hand. Shape the dough into a ball and wrap in cling film. Leave to rest for 30 minutes. Then portion and press down a little.

Using a pasta machine, gradually roll out the dough into thin sheets of dough up to setting 2. Alternatively, roll out with a rolling pin. Place the sheets of dough on a floured work surface and cut into pieces of around 2-3 cm (Austrian: Fleckerl). Heat salted water and cook the pieces of dough for 2-3 minutes. Take out of the water and set aside. Place the dumplings in a bowl and mix with a little olive oil so they don’t stick together.

Ingredients for the herb:

Peel the onions and garlic and cut into fine strips. Quarter the cabbage, remove the stalk and cut into strips.

Heat the olive oil in a wide saucepan and sauté the minced meat, add the garlic and onions. Add the cabbage and sauté a bit. Stir in the tomato paste and roast briefly. Pour in the cream and add the cumin and tarragon. Season everything with salt, pepper and sugar. Let the minced meat and cabbage mixture simmer for about 4-5 minutes over a low heat until creamy. Gently mix in the pasta pieces and heat through the mixture.

Place the Krautfleckerl on a plate and garnish with herbs to taste.
