Recipe: Make your own pasta | The first


Every year on October 25, fans celebrate World Noodle Day. It is intended to show that pasta is a foodstuff that is used on all continents.

In keeping with World Pasta Day, we’ll tell you how you can easily make pasta yourself – without a pasta machine!

For 2 people you need:

  • 200 grams of flour
  • Pinch of salt
  • 2 room temperature eggs
  • 1 tsp olive oil

Knead all ingredients into a dough. If necessary, add some water. And now knead for about 10 minutes! Until the dough is glossy and no longer sticks to the bowl. This is the only way for the flour to develop its strength and the noodles not to fall apart later.

Cover and leave to rest for 30 minutes. Roll out the dough thinly on a floured surface using a rolling pin (hence the name!). Cut thin strips for tagliatelle or roll out with a pastry wheel. Or you cut off thicker strips, divide them into smaller pieces and press them together with 2 fingers to form a bow. Boil in salted water for 3 minutes.

Serve with sage butter and freshly grated Parmesan or your choice of sauce. Enjoy your meal!

Pasta is also gluten-free, without flour! For 2 servings you need:

  • 200 grams of chickpea flour
  • 2 room temperature eggs
  • 1 tsp olive oil

Or even vegan! For 2 servings you need:

  • 250 grams of buckwheat flour
  • 4 tablespoons flaxseed flour
  • 200ml of water

Knead both doughs well and let them rest covered in the fridge for 1 hour. Process and cook as described above.
