When it gets warmer outside, people’s culinary cravings also change: Because now people are grilling more often. But grilling is not just about the main characters on the grill, but also about the side dishes. A particularly popular side dish in eastern Germany is the cheese salad. It’s mild, cool, easy to make and brings back memories – at least when you make it with this recipe from the GDR!
The ingredients for cheese salad according to the GDR recipe
You need 200 grams of semi-hard cheese (preferably Gouda), 200 grams of tomatoes, 1 cucumber, 2 onions, 2 tablespoons of cucumber water, 3 tablespoons of oil, salt and pepper (maybe a bit more vinegar).

Here’s how it works: The preparation of the GDR cheese salad is wonderfully simple. Wash the tomato and cucumber under cold water. Halve the cucumber lengthwise and thinly slice both halves.
Quarter the tomato, place the seeds in a small bowl and dice the flesh. Then put them in a large bowl with the cucumber slices.
Now cut the onion into small cubes and the cheese into slightly larger cubes. Both come with cucumber and tomato in the salad bowl.
For the dressing, add two tablespoons of gherkin water from a pickle jar and three tablespoons of oil to the tomato seeds: it tastes best olive oil, but you can also use any other oil. Now add a good amount of salt and pepper and mix everything together.
Feel free to season the dressing well, the salad will make it milder again. If necessary, you can also add a dash of vinegar.
Then pour the dressing over the salad and mix well. Feel free to use your hands so you can distribute the dressing better. And then the delicious cheese salad based on the GDR recipe can be served on the grill buffet. Enjoy your meal!
