The Japanese ramen soups are also becoming increasingly popular in Europe. Here you can find out what must not be missing in the hearty dish.

Not only the Japanese type of noodle is called ramen, but also the noodle soup dish itself. It is rich in proteins, which makes it filling quickly.

You can also prepare ramen very easily at home. Many variations can be created. A variety of products are ideal as toppings, whether vegetables, eggs, tofu, mushrooms or meat. Another advantage: the ingredients are comparatively cheap.

Ramen Recipe: The Base

Despite the different preparation options, ramen always consists of five elements:

  1. Ramen Noodles
  2. broth
  3. Tare (seasoning sauce or paste)
  4. Topping
  5. aromatic oils

How to prepare ramen

The ramen noodles (you can also buy them ready-made if you don’t have much time):

For two servings you will need:

  • 240 grams of wheat flour
  • 90 ml lukewarm water
  • 1 teaspoon Kansui water (a particularly salty water)
  • some potato starch
  1. First make an alkaline solution. To do this, mix the water with the Kansui water.
  2. Put the flour and some cornstarch in a bowl and put the solution in the middle.
  3. Mix the batter until small lumps form.
  4. Then knead the dough into a small ball and let it rest covered at room temperature for about 30 minutes.
  5. Finally, make noodles using a pasta machine. Ideally use level 3 and the spaghetti attachment.
  6. Bring the noodles to a boil in a large pot with plenty of water. Stir in between so the noodles don’t stick together. Cook for about a minute or two – cooking time depends on pasta thickness and desired consistency. Pour into a colander and let drain. Then add to the hot ramen broth.

For the preparation There are different variants of the broth:

  • With kombu (seaweed) and shiitake mushrooms
  • With chicken, carrots, onion, leek, spring onion and ginger
  • With pork bones, onions, leeks, spring onions, garlic, ginger and shiitake mushrooms

Cut all the ingredients for the desired broth into large pieces, put them in a saucepan and pour about a liter of water over them. Heat everything to 60 °C and then remove the pot from the stove. Cover and leave to stand for about 30 minutes and then remove the ingredients.

If you don’t want to make the ramen noodles yourself, you can buy them ready-made and concentrate on a fine broth with the right toppings.
