This lightning recipe will delight everyone

Our delicious pumpkin galette is prepared in a short time, tastes wonderfully spicy and is the perfect autumn meal for the whole family. Here comes the ingenious lightning recipe!

Especially now in autumn, I love savory tarts, quiches and galettes that come out of the oven steaming hot. My problem: I am at war with shortcrust pastry. It will either be rock hard or will still be soft after baking. So that I can still enjoy a homemade autumn tart, I just cheat a little.

For my delicious pumpkin recipe, I simply use a ready-made shortcrust pastry, often called tart or quiche dough. You can now get it in the deli counter or frozen in almost every supermarket or discounter. Tart or quiche dough has the advantage that it’s already round, so you don’t have to “cut” it out first. Perfect for galette recipes!

With simple steps and delicious ingredients you can conjure up the perfect autumn meal. And I promise: After the first delicious bite, no one at the table will complain that you used ready-made dough.

Quick pumpkin galette: Easy recipe with shortcrust pastry

Incidentally, a galette is the French term for a flat cake that can be savory or sweet. It’s similar to the classic tart, but it’s a lot easier to make. You don’t need a tart pan for this, but bake the galette directly on the tray.

You can use either butternut or Hokkaido squash for the pumpkin galette. Hokkaido has the advantage that you don’t have to peel it. An annoying and time-consuming affair that I like to save myself.

Creamy goat’s cheese and fresh thyme serve as the perfect complement to the buttery-sweet pumpkin. A taste trio that is second to none. If you don’t like goat cheese, you can replace it with feta.

Ingredients for a pumpkin tart:

  • 1 pack of shortcrust pastry
  • 1 small pumpkin
  • 1 small red onion
  • 150 g goat cream cheese (as a roll)
  • 4 sprigs of thyme
  • 50 g sour cream
  • Salt pepper

To prepare:

1. Preheat the oven to 200°C top/bottom heat. Unroll the shortcrust pastry directly onto a baking sheet using the baking paper provided in the package.

2. Wash the pumpkin and peel depending on the variety. Then quarter, remove the seeds and cut into very thin slices. Peel the onion and also cut into thin strips. Alternatively, you can also slice the pumpkin and onion. This makes the slices even finer. Wash the thyme and pluck off the leaves. Cut the goat cheese into slices.

3. Season the sour cream to taste with salt and pepper and spread on the shortcrust pastry. Leave about 3 cm at the edge. Now cover the dough with pumpkin, onions and goat’s cream cheese. Season again with salt and pepper and sprinkle over the thyme leaves.

4. Fold the edge of the galette inwards and brush the edge with a little water. Put the tray on the lower shelf in the oven and bake at 220 °C top/bottom heat for 35 – 40 minutes. To serve, you can place a few sprigs of fresh thyme on the galette. Looks great and smells heavenly!

The great thing about savory galettes: You can modify them to suit your mood and taste. You can also use blue cheese instead of goat cheese. Pear goes perfectly with it. Together with cheese and pumpkin, this results in a real taste explosion.
